I was wondering if there are any fics out there, that deal with Jack being Irish.
Maybe something about his cultural backround or the language.

Off the top of my head,, the one I can think of is Jack/Daniel slash. Roots, by Lady Grey:

It's part of a series, but stands alone as an established relationship fic. Jack brings Daniel and his newly found daughter home for Christmas to meet his Irish-American family. There's Irish Gaelic, music, and history.
